Make pasta from scratch with Michele!

Pasta Deliziosa!

Adult Services Librarian Michele Bertolini is back in the kitchen with her friend Heidi for another virtual cooking lesson. This time, she’s making authentic pasta from scratch.  Join Michele virtually in her kitchen and learn how to make delicious pasta. 

You, too, can make pasta now that the York Public Library has added a pasta machine to our collection for weekly check-outs! 

Michele’s recipe is below.  

Homemade PastaRECIPE: Homemade Pasta a la Michele

Makes approximately 1 pound of pasta, serves 6 people

  • 2  1/2 cups of flour
  • 3 eggs, at room temperature for an hour
  • Olive oil
  • 2 teaspoons of salt

DIRECTIONS

On a wooden board, mix flour and salt. Make a well and crack the 3 eggs into the center. Mix eggs gently so it doesn’t spill over the well. Add 1 teaspoon of olive oil and 1/2 egg shell of water (might need another ½). Slowly incorporate the egg mixture into the flour mixture until the dough is formed. Continue kneading until smooth, 10 minutes. You can put the dough into a standing mixer with the hook attachment for a few minutes, but you need to also knead by hand. Cover the dough with a bowl or clean towel and let it rest for 30 minutes. 

*You can use a food processor instead of making it by hand on a wooden board. 

Follow directions for rolling out the dough with the pasta machine. If you are cutting by hand, you will need to use a rolling pin to flatten the dough evenly and hand cut your pasta. Dry or freeze your pasta. When cooking, bring a full pot of salted water to a rolling boil, drop the pasta in all at the same time. Once it returns to a boil, cook for 3-4 minutes, depending on the size of your pasta.
